In
the southern most part of South East Sicily, on the hills of the
Ibleo plain, approximately 400 meters above sea level, in the heart
of an area known to the European Economic Community as the "Monti
Iblei Protected Original Production area", some of
the most celebrated producers of extra-virgin olive oil have founded
the C.O.PA. COOPERATIVA AGRICOLA.
On
these member farms, centuries old olive trees grow on gentle slopes
where the favourable foothill-climatic conditions, a correct exposure,
clean air and the nature of the soil create the ideal microclimate
for their cultivation. To
this we must add that the "Moresca", "Verdese"
and the "Tonda Iblea" species – called "cultivar"
(traditionally cultivated) – are perfectly integrated in the
territory and that their characteristics are wonderfully blended
thus creating an oil with amazing taste characteristics.
